A high-temperature dish machine needs a final rinse of about 180°F to sanitize; a low-temp machine relies on chemical sanitizer instead. If the rinse gauge reads low, check the booster heater breaker, incoming water temperature and scale on the booster elements. If dishes aren't clean, check wash arms, scrap screens, wash temperature and detergent feed. Low rinse temperature that won't recover needs a technician.

7 checks you can do safely

  1. Read the gauges during a full cycle. Wash and final-rinse temperatures should be checked mid-cycle, not idle.
  2. Check the booster breaker. A tripped booster circuit drops the rinse temperature immediately.
  3. Check incoming water temperature. A weak building water heater makes the booster work harder.
  4. Delime the machine. Las Vegas hard water scales booster elements and wash tanks — follow the deliming schedule.
  5. Clean wash arms and scrap screens. Clogged nozzles leave food on dishes.
  6. Check chemicals. Low-temp machines need sanitizer at the right concentration; test strips confirm it.
