Cold food must stay at 41°F or below. When a reach-in or prep table runs warm, the most common cause in Las Vegas kitchens is a condenser clogged with grease and dust. Clean the condenser grille, make sure product isn't blocking the evaporator fan, check door gaskets and self-closers, close prep-table lids between rushes and look for ice on the coil. 7 checks you can do safely
- Clean the condenser. Brush or vacuum the condenser fins; in a busy kitchen, every 1–3 months.
- Free the airflow. Keep product a few inches away from the evaporator fan and vents.
- Check door gaskets. Torn or flattened gaskets let warm, humid air in and ice up the coil.
- Check self-closing doors. Doors left ajar during service are a leading cause of warm units.
- Close prep-table lids. An open lid between rushes warms the pans.
- Look for ice. Ice on the evaporator coil points to a defrost or airflow fault.
- Check the room. Units next to fryers or ovens need ventilation clearance.
When to call a technician
- Temperature stays above 41°F after cleaning the condenser.
- Compressor cycles on and off or won't start.
- Water on the floor from a frozen or clogged drain.
Stay safe
Unplug the appliance (or switch off its breaker) before touching anything inside it, and never open a sealed refrigeration system, a gas valve or a microwave.
